I'm going to order this CPU from Newegg tonight, and the combo has some PC2 1066 RAM in with it.
However, there are no boards on newegg above PC2 800. Can I run this RAM in a PC2 800 socket? Or should I ignore the combo and go with the correct speed RAM?

That RAM will be just fine. It is memory designed for people that overclock.

I went with the below combo last week and it runs great, even overclocked 3.2 ghz. The memory below runs at CAS 4 with timings of 4-4-4-15 Save yourself some bucks, that memory you picked out is overkill for that processor. It's already at the near max over-clock being that it runs at a native 3ghz, buying that faster memory at that cas level of 5 is not going to buy you much, but cost you a extra 150 clams. I love the below motherboard also. I had it powered up in less than 20 minutes, and crunching.

I also have some RAM picked out, similar spec and price to the OCZ - but I might go with the one you linked instead. I have 2GB DDR 3200 platinum at the moment in my 754 and it kicks ass.
